• 1 tbsp. extra-virgin olive oil
• 1 (16 oz.) package shelf-stable gnocchi (see Tip)
• 1 tsp. extra-virgin olive oil
• 1 medium yellow onion, thinly sliced
• 4 cloves garlic, minced
• 1/2 cup water
• 6 cups chopped chard leaves or spinach
• 1 (15 oz.) can diced tomatoes with Italian seasonings
• 1 (15 oz.) can white beans, rinsed
• 1/4 tsp. freshly ground pepper
• 1/2 cup shredded part-skim mozzarella cheese
• 1/4 cup finely shredded Parmesan cheese

• On medium heat, heat a tbsp. of oil in a big non-stick pan. Add and cook gnocchi while stirring frequently for 5-7mins until it begins to brown and plump; move to a bowl.
• Add onion and the remaining tsp. of oil into the pan. On medium heat, cook and stir for 2mins. Mix in water and garlic; cover. Cook for 4-6mins until the onion is soft; put chard or spinach in. Cook and stir for 1-2mins until it begins to wilt. Mix in pepper, beans, and tomatoes; simmer. Mix in gnocchi then scatter Parmesan and mozzarella; cover. Cook for about 3mins until the sauce bubbles and the cheese melts.
